Apple Banana Oatmeal Muffins

Do you love a fresh baked muffin? Me too!


And these Apple Banana Oatmeal Muffins are so yummy! A fresh apple muffin that fills the house with delightful smells of cinnamon and nutmeg while it bakes... oh my YUM.


And they taste as good as the smell! They're great for a quick hearty breakfast, pre or post workout snack, or after dinner "treat." Each muffin is loaded with dietary fiber, vitamin C, potassium, calcium, protein, and complex carbs to keep you going strong!


Whip up a batch of jumbo size muffins for a quick grab-and-go breakfast, or bake a batch of minis or standard size muffins for a healthy snack you can feel good about sharing with the whole family.


Simply pick your favorite apple (I love honeycrisp!) and get ready to enjoy!


Apple Banana Oatmeal Muffins


Ingredients

  • 1 & 1/2 C oats

  • 1 C whole wheat flour (or your favorite gluten free flour)

  • 3 tsp. baking powder

  • 1 & 1/2 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • 2 eggs

  • 4 Tbsp. coconut oil

  • 3 Tbsp. coconut sugar

  • 3 Tbsp. honey

  • 2/3 C unsweetened vanilla almond milk (or milk of choice)

  • 2 bananas, mashed

  • 1 apple, grated (pick your favorite!)

Directions

  1. Preheat oven to 350 degrees.

  2. Combine oats, flour, baking powder, cinnamon and nutmeg in a large mixing bowl and set aside.

  3. With a hand mixer beat together eggs, coconut oil, sugar and honey with until fluffy.

  4. Add milk to wet mixture and stir well.

  5. Stir wet ingredients into dry ingredient mixture, add mashed banana and grated apple when flour is nearly all mixed in.

  6. Scoop into greased or paper lined muffin tin and bake for 25-30min (or until toothpick comes out clean).
