Apple Cinnamon Cookies

Do you love the smell of fresh baked apple and cinnamon? How about a baked good with fresh chunks of fruit baked right in? A moist cake like cookie with a crisp baked outer edge?


Enter these tasty Apple Cinnamon Cookies!


Made with hearty grains, fresh baked apple and sweet and spicy cinnamon, this cookie does not disappoint. And even better, you can enjoy them knowing you're supporting your eat better goals, one bite at a time!

Apple Cinnamon Cookies


Ingredients

  • 1 C oats

  • 3/4 C whole wheat flour (or gluten free substitute)

  • 2 tsp. cinnamon

  • 1 tsp. baking powder

  • 1/4 tsp. ground nutmeg

  • 1/4 tsp. allspice

  • 1 egg

  • 2 Tbsp. coconut oil, melted

  • 1 tsp. vanilla

  • 1/2 C honey (or maple syrup)

  • 1 large apple, chopped

Directions

  1. Preheat oven to 350 degrees.

  2. In a medium size mixing bowl combine all dry ingredients and blend with a spoon.

  3. In a small size mixing bowl combine all wet ingredients except the apple, whisk with a fork until well combined.

  4. Add wet ingredients to dry ingredients and stir well.

  5. Fold in chopped apple, gently stirring with a spoon.

  6. Spoon dough balls onto a baking sheet and flatten to about 1/2" thick.

  7. Bake in the oven approximately 15minutes, or until the edges turn a light golden brown.

  8. Remove from the oven and cool on a baking rack.
