Chewy Oatmeal Cranberry Breakfast Bars

Loaded with essential nutrients, vitamins and minerals to support your busy day, it's simple to make, deliciously satisfying and will support your healthy eating goals too – Chewy Oatmeal Cranberry Breakfast Bars!


I love this recipe because I can enjoy a yummy granola bar again, without all the added sugars and salt.


And these breakfast bars are super simple to make with only 6 ingredients you can find in your pantry and fridge... because I don't know about you but I don't have loads of time to spend in the kitchen!


But why limit yourself to enjoying them in the morning? You can chew on these bars any old time -- as a healthy snack, after school treat for the kiddos, to satisfying a late night craving and more!

Chewy Oatmeal Cranberry Breakfast Bars

Ingredients

  • 3 bananas, mashed

  • 1/3 C unsweetened applesauce

  • 2 C oatmeal (can opt for gluten free)

  • 1/4 C unsweetened vanilla almond milk (or milk of choice)

  • 1/2 C dried cranberries (or raisins, dates, etc.)

  • 1 & 1/2 tsp. cinnamon

Chewy Oatmeal Cranberry Breakfast Bars

Directions

  1. Preheat oven to 350 degrees.

  2. In medium size bowl combine mashed banana with wet ingredients, then add cinnamon and mix well with a fork.

  3. Add oatmeal and stir until well combined.

  4. Spread mixture into a 12x12 baking dish (lightly coat if using a metal pan vs. glass baking dish)

  5. Bake 20 minutes (or until lightly golden brown)

  6. Remove from oven and cool for at least 5 minutes before cutting into squares to serve.
