Oatmeal Chocolate Chip Energy Bites

It's time to get energized with this tasty no bake recipe: Oatmeal Chocolate Chip Energy Bites!


An excellent pre or post workout snack and a perfect bite size treat to satisfy your sweet tooth. I remember making my first batch of energy bites as a kid, back when I was a campfire girl... they were great then and I remain a fan today!


And because this is a "no bake" recipe, you can invite the little chefs in your household to help you whip up a batch, making "cooking" a fun and interactive tactile experience!


And loaded with heart healthy ingredients they offer a great balance of protein, complex carbs and healthy fats! YUM!


Ingredients

  • 1 C rolled oats

  • 1/2 C nut butter of choice (or use a nut butter sub)

  • 1/3 C honey

  • 1/4 C ground flaxmeal

  • 1/3 C mini chocolate chips (or carob chips)

Directions

  1. Melt 1/2 C nut butter in a small bowl until easily stirred (approximately 30 seconds).

  2. In a large mixing bowl combine oats, melted nut butter, honey, ground flax meal and mini chocolate chips - stir well.

  3. Line a baking sheet with wax paper.

  4. Scoop spoonful of batter to round into balls with your hands and place on the wax coated baking sheet.

  5. Place baking sheet in the freezer for about 1 hour or until balls are nice and solid.

  6. Remove and store in an airtight container or ziplock bag in the fridge for up to one week.


Tip - try mixing up the flavor by adding chopped dates, dried cherries, dried apples, raisins, pumpkin puree, shredded coconut, crushed graham crackers, chia seeds, pumpkin and/or sunflower seeds to create your own unique energy ball recipe!
