Peanut Butter Cookies

Do you love peanut butter? Oh man I do! It's one of my healthy food staples and I use it and other nut butters in all sorts of my baked treat recipes... including this one!


And I must warn you, these Peanut Butter Cookies are beyond amazing!


So rich and creamy, I seriously can't believe they're actually good for you too... But they are!


All it took was a few simple level up swaps to make these amazing cookies delicious AND nutritious.


Plus you just need four simple ingredients to whip up a batch. Simple and satisfying for the WIN! In fact, I think I'm better to go whip up a quick batch for the weekend right now...

Peanut Butter Cookies

Ingredients

  • 1 C creamy or crunchy natural peanut butter

  • 1/2 C honey

  • 1 egg

  • 1 tsp. vanilla

Directions

  1. Preheat the oven to 350 degrees.

  2. Place peanut butter in medium size bowl and microwave approximately 30 seconds (until easily stirred).

  3. Add honey and vanilla and stir well.

  4. In a small bowl lightly beat the egg with a fork, whisk or hand mixer, stir into peanut butter mixture until well combined.

  5. Use a cookie scoop to place 1-2Tbsp. of dough onto a baking sheet (I prefer a cookie scoop for this due to the texture of the batter, but you can also use a large spoon), flatten each ball slightly.

  6. Bake 12-15min (until the edges turn a light golden brown), remove from oven and while cookies are still warm use a fork to create the criss cross pattern on top.

  7. Allow cookies to cool 2 or so minutes on sheet before transferring to a cooling rack.
