Pumpkin Apple Muffins

Looking for a baked treat that screams “Autumn!”? You're going to LOVE these delicious Pumpkin Apple Muffins.
Loaded with the fresh in season pumpkin, apple and complemented by the spices of the season, they're a tasty and wholesome treat you can enjoy as a part of a healthy breakfast, hearty snack, or anytime that muffin craving calls. Whip up a batch and let us know what you think!

Ingredients
1 C whole wheat flour (or gluten free sub)
1 tsp. pumpkin pie spice
1tsp. cinnamon
1 tsp. baking soda
2 Tbsp. butter, melted
1/4 C honey
1 large egg
1 tsp. vanilla
1/2 C pumpkin
1 C grated apple
Directions

Preheat oven to 350 degrees and add paper cups to muffin tin (or coat with non stick spray).
Combine all dry ingredients in a large mixing bowl; flour, pumpkin pie spice, cinnamon, baking soda.
Blend melted butter, honey, egg, vanilla, and pumpkin on low speed in a small mixing bowl.
Use a food processor to finely grate 1 C apple (can also use a hand grater if needed or larger shreds of apple are preferred). Set grated apple aside.
Add wet mixture to dry and stir until just combined.
Fold apple in gently.
Fill each muffin cup about three quarters full and place tray on the center rack of the oven.
Bake for 15-20 minutes (or until toothpick inserted at the center of a muffin comes out clean).
