Roasted Cauliflower

Looking for a tasty side dish? Bored with the same old veggies? Maybe it's time to try a batch of Roasted Cauliflower!


By grilling, sautéing, baking, broiling, steaming or roasting your vegetables you can actually change their texture from hard to soft or wet to crunchy and alter their flavor, going from sharp to mild or mild to mellow.


Raw cauliflower is traditionally a sharper flavor, which can be a turn off to picky vegetable fans. By roasting that cauliflower with a few zesty seasonings and topping it with a hint of cheese (optional), you can take it from boring and bland to downright delicious! And bonus, this recipe is so easy to make - just rinse, chop, season, shake, bake and viola - you've got yourself a healthy & tasty side! Think you don't like cauliflower? Give this recipe a try!

Did you know.... cauliflower is an excellent source of potassium, vitamin C, protein, and vitamin B6. It is also a good source of magnesium, calcium, iron, and dietary fiber - that is quite a powerhouse!


Ingredients

  • 1 head of organic cauliflower

  • 3 cloves fresh garlic, chopped (or 1 & 1/2 tsp minced)

  • 2 Tbsp. olive oil

  • 1 Tbsp. lemon juice

  • 1/2 - 1 Tbsp. shredded low-fat parmesan cheese (can opt for vegan friendly)

  • 1 fresh sprig of parsley, chopped (optional)

  • 1 large ziplock bag

Directions

  1. Preheat oven to 400 degrees.

  2. Rinse and chop the cauliflower and place into a large ziplock bag.

  3. Add olive oil, lemon and garlic and seal the ziplock bag shut.

  4. Shake bag vigorously until cauliflower is well coated.

  5. Cover a rimmed baking sheet lined with parchment paper and spread the coated cauliflower evenly in a single layer.

  6. Lightly sprinkle cauliflower layer with fresh parsley (optional).

  7. Place the baking sheet on the top rack of the oven and bake for approximately 30min. (or until cauliflower begins to turn a nice golden brown).

  8. Remove baking sheet from the oven and while cauliflower is still warm, lightly sprinkle with shredded parmesan cheese.

  9. Cool slightly before serving.
