Simple Chia Pudding

Chia seeds have gained popularity in recent years, often labeled as a "superfood" on social media and blowing up on the internet for their versatility, nutrient dense profile, and ability to complement most any dish, they're also great for vegetarian, vegan and gluten free lifestyles.


Loaded with antioxidants, fiber, and healthy fats, chia seeds are a good source of plant protein (offering 4.7 grams per 1 ounce), and are excellent added to Greek yogurt, blended into smoothies, sprinkled on oatmeal and even used as an egg substitute.


Ready to give them a try? Here's a super simple recipe to get you started!

Ingredients:

  • 2 Tbsp. chia seeds

  • 1/2 cup almond milk (or milk of choice)

  • 1 tsp. honey or pure maple syrup (optional)

  • Top with strawberries, blueberries, raspberries or any of your favorite fruits

  • Optional ingredients: add a scoop of your favorite protein powder for an additional protein boost, sprinkle a bit of low sugar granola or crushed nuts for crunch


Directions

  1. Pour ingredients into a mason jar or small glass and mix well. Let settle for 2-3 minutes before mixing again, blend until mixture is smooth.

  2. Cover the jar and store in the fridge overnight (or at least 3 hours).

  3. Top with your favorite fruit and enjoy cold.
